Agápi Happy Salad

Roasted veggie skewers and beef bangers, served with tomatoes, feta, basil and toasted pitas.




Ingredients to serve 2

  • ½ x red onion – peel & cut into wedges (1½ cm)
  • 2 x courgettes – slice (1½ cm)
  • 4 x skewers
  • 4 x beef bangers
  • 2 x pita breads
  • 1 tsp x dried oregano
  • 2 x tomatoes – cut into wedges (2cm)
  • 50g x Fairview feta – cut into cubes (2cm)
  • 5g x fresh basil – remove leaves, discard stalks
  • ½ x lemon – cut into wedges
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)
  • tin foil (from your pantry)

  • 1 x red onion – peel & cut into wedges (1½ cm)
  • 4 x courgettes – slice (1½ cm)
  • 8 x skewers
  • 8 x beef bangers
  • 4 x pita breads
  • 2 tsp x dried oregano
  • 4 x tomatoes – cut into wedges (2cm)
  • 100g x Fairview feta – cut into cubes (2cm)
  • 10g x fresh basil – remove leaves, discard stalks
  • 1 x lemon – cut into wedges
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)
  • tin foil (from your pantry)

Method

Step 1

Preparation: Preheat the oven to 200°C. Prepare all ingredients as indicated above.

Step 2

Skewers: Cut the red onion wedges in half and thread them onto the skewers with the courgettes (see picture below). Place on a tin foil lined baking tray with a drizzle of olive oil and season with salt and pepper. Roast for 20 minutes until golden and cooked.

Step 3

Beef bangers: Place on a separate baking tray with a drizzle of olive oil. Season with pepper and cook for 20-25 minutes until golden brown and cooked through.

Step 4

Pita breads: Warm in the oven for 2 minutes. Remove and cut into quarters.

Step 5

Tomato and feta: Sprinkle HALF the oregano over the tomato wedges, season with salt and pepper and sprinkle the REST of the oregano over the feta cubes.

Step 6

Serve the veggie skewers with the beef bangers and the tomatoes, feta, basil and pita breads on a plate. Drizzle with a little olive oil and serve with lemon wedges.
