Salmon & Salad

10 minute dish! Smoked Norwegian Salmon ribbons drizzled with fresh lemon juice. Fresh side salad with crumbled feta on top.




Ingredients to serve 2

  • 80g x salmon ribbons
  • 40g x salad leaves
  • 1 x tomatoes – slice
  • ½ x cucumber – dice (1cm)
  • 50g x feta
  • ½ x red onion – slice finely
  • ¼ tsp x mustard powder.
  • ¼ tsp x xylitol
  • 1 x lemons – juice
  • 2 tbsp x olive oil for dressing (from your pantry)
  • . x salt & pepper (from your pantry)

Ingredients to serve 4

  • 160g x salmon ribbons
  • 80g x salad leaves
  • 2 x tomatoes – slice
  • 1 x cucumber – dice (1cm)
  • 100g x feta
  • 1 x red onion – slice finely
  • ½ tsp x mustard powder.
  • ½ tsp x xylitol
  • 2 x lemons – juice
  • 4 tbsp x olive oil for dressing (from your pantry)
  • . x salt & pepper (from your pantry)

Method

Step 1

Prepare all ingredients as indicated above.

Step 2

Whisk together the mustard powder, salt, pepper, xylitol, olive oil and HALF the lemon juice in a mug/small bowl to make the dressing. Combine the salad leaves, tomatoes, cucumber and red onion in a salad bowl. Drizzle the dressing over the top and toss to coat.

Step 3

To serve, divide the salmon ribbons between the plates and drizzle with a little of the remaining lemon juice. Add a serving of salad on the side and crumble feta over the top.
