Rosmarino Salad

Rosmarino pasta salad with a honey mayonnaise dressing, topped with crumbled feta.




Ingredients to serve 2

  • ½ x lemon – zest & juice
  • ½ x cucumber
  • 1 cup x rosmarino pasta
  • 1 tbsp x red wine vinegar
  • 1 sachet x honey
  • 3 tbsp x mayonnaise
  • 100g x cherry tomatoes – cut in half
  • ½ tin x chickpeas – drain & rinse
  • ¼ x red onion – peel & chop finely
  • 3g x fresh mint – remove leaves, discard stalks
  • 3g x fresh parsley – chop leaves roughly
  • 3g x fresh basil – chop leaves roughly
  • 50g x Fairview feta
  • salt & pepper (from your pantry)
  • olive oil (from your pantry)

  • 1 x cucumber
  • 2 cups x rosmarino pasta
  • 2 tbsp x red wine vinegar
  • 2 sachets x honey
  • 6 tbsp x mayonnaise
  • 200g x cherry tomatoes – cut in half
  • 1 tin x chickpeas – drain & rinse
  • ½ x red onion – peel & chop finely
  • 5g x fresh mint – remove leaves, discard stalks
  • 5g x fresh parsley – chop leaves roughly
  • 5g x fresh basil – chop leaves roughly
  • 100g x Fairview feta
  • salt & pepper (from your pantry)
  • olive oil (from your pantry)

Method

Step 1

Preparation: Boil the kettle. Prepare all ingredients as indicated above.

Step 2

Lemon: Using the fine side of a box grater, grate the peel to create zest. Cut in half and juice.

Step 3

Cucumber: Slice into rings and cut these rings into quarters.

Step 4

Rosmarino: Place a pot on medium-high heat and add the boiling water. When the water is at a rolling boil, add the rosmarino pasta and cook for 9 minutes. You want it al dente, which is slightly chewy and translucent. Drain in a colander and rinse with cold water. Drizzle with a little olive oil to keep the pasta from sticking together.

Step 5

Dressing: Mix together the red wine vinegar, honey, mayonnaise, lemon zest and HALF the lemon juice.

Step 6

Salad: Mix dressing through the pasta, then add the cherry tomatoes, cucumber, chickpeas and red onion. Chop the mint leaves roughly and add it to the salad with the parsley and basil. Mix through and season with salt and pepper to taste.

Step 7

Serve by crumbling the feta over the salad.
