Method
Step 1
Preparation: Prepare all ingredients as indicated above.
Step 2
Sauce: Mix together soy sauce, rice wine vinegar, garlic, ginger and sweet chilli sauce. Set aside.
Step 3
Steak mince: Place a pan on medium-high heat with a drizzle of olive oil. Add the mince, season with a little salt and pepper and brown for 3-4 minutes, breaking it apart with a spoon. Remove and set aside.
Step 4
Mince stir-fry: Using the same pan, turn the heat up to high and add a drizzle of olive oil. When hot, add the red onion and green beans and sauté for 3-4 minutes. When the green beans are nearly cooked, add the spring onions and mince. Cook for 1 minute, until everything is cooked, and the green beans still have a slight bite. Mix through HALF the sauce.
Step 5
Soba noodles: Boil the kettle. Place a pot on medium-high heat and add the boiling water. When the water is at a rolling boil, add the noodles and cook for 2½ minutes. You want it al dente, which is slightly chewy and translucent. Drain and drizzle with a little olive oil to keep it from sticking together.
Step 6
Serve the noodles topped with the stir-fry and drizzle with the REST of the sauce.
