Cheesy Fish Pie

Deboned white fish fillets poached in milk seasoned with clove-studded onions and bay leaves and then flaked, scattered with finely chopped parsley and covered in a nutmeg flavoured white sauce. Golden baked potato mash covered with grated mature cheddar topping completes this delicious, quick and easy fish pie.




Ingredients to serve 2

  • 2 x potatoes - peel and dice into 2cm chunks
  • 300g x deboned hake or angelfish
  • 1/2 x onion - peel and quarter
  • 2 x cloves
  • 1 x bay leaves
  • 1/2 tbsp x fresh parsley - chop finely
  • 1/4 tsp x nutmeg
  • 1 tbsp x plain flour
  • 25g x mature cheddar cheese - grate coarsely
  • 1 cup x full cream milk (from your pantry)
  • 2 tbsp x butter (from your pantry)
  • salt and pepper (from your pantry)

  • 1 x onion - peel and quarter
  • 4 x cloves
  • 2 x bay leaves
  • 1 tbsp x fresh parsley - chop finely
  • 1/2 tsp x nutmeg
  • 2 tbsp x plain flour
  • 50g x mature cheddar cheese - grate coarsely
  • 2 cups x full cream milk (from your pantry)
  • 4 tbsp x butter (from your pantry)
  • salt and pepper (from your pantry)

Method

Step 1

Preheat the oven to 200⁰C.

Step 2

Mashed Potato: Bring a large saucepan of lightly salted water to the boil. Add the diced potatoes, and cook for about 10 minutes until tender. Drain, add a few splashes of milk, ¼ of the butter, salt and pepper to taste, and mash well. Keep warm.

Step 3

Poached fish: Put the fish in a frying pan on medium heat with the milk and bay leaves. Stud each onion quarter with a clove and add to the pan. Bring the milk to a gentle boil and then reduce the heat and simmer for 8 mins. Lift the fish onto a plate and strain the milk into a jug to cool. Flake the fish into large pieces in the baking dish and scatter with fresh parsley.

Step 4

White sauce: Melt ¾ of the butter in a saucepan on medium heat. When the butter has melted add flour and stir into a doughy mixture - about 4 minutes. Remove from heat and add the cooled poaching milk (⅓ at a time) mixing well between each addition with a whisk. Add salt, pepper and nutmeg. Return to the stove on medium to low heat and cook for another 5 minutes, stirring constantly, until sauce thickens.

Step 5

Fish pie: pour the white sauce over the fish. Top with mashed potato and finally scatter with grated cheddar cheese.

Step 6

Bake in the oven for 20 minutes until the cheese turns to a light brown crust. Remove from the oven and allow to cool for 5 minutes before serving.
