Baked Eggs

Baked eggs in a homemade tomato sauce mixed with seasonal greens and beans. Topped with a dollop of sour cream and served with toasted baguettes.




Ingredients to serve 2

  • 1 x baguettes
  • ½ x onion – peel & chop finely
  • 1 clove x garlic – peel, grate finely & chop
  • ⅛ tsp x nutmeg
  • ½ tsp x mixed herbs
  • ½ sachet x tomato paste
  • ½ tin x cannellini beans – drain & rinse
  • 1 x tomatoes – dice (1cm)
  • ½ cup x passata
  • ½ cup x water (for the tomato sauce)
  • 100g x Swiss chard – remove stalks & slice (1cm)
  • 2 x eggs (from your pantry)
  • 2 tbsp x sour cream
  • ½ x fresh chilli (optional) – deseed & chop finely
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)
  • tin foil (from your pantry)

  • 2 x baguettes

  • 1 tin x cannellini beans – drain & rinse
  • 2 x tomatoes – dice (1cm)
  • 1 cup x passata
  • 1 cup x water (for the tomato sauce)
  • 200g x Swiss chard – remove stalks & slice (1cm)
  • 4 x eggs (from your pantry)
  • 4 tbsp x sour cream
  • 1 x fresh chilli (optional) – deseed & chop finely
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)
  • tin foil (from your pantry)

Method

Step 1

Preparation: Preheat the oven to 180°C. Prepare all ingredients as indicated above.

Step 2

Baguettes: Warm in the oven for 10 minutes until golden and crusty.

Step 3

Tomato sauce: Place a pan on medium-high heat with a drizzle of olive oil. When hot, add the onion with a pinch of salt and cook for 5 minutes. Add garlic, nutmeg, mixed herbs and tomato paste and cook for 30 seconds. Then add the cannellini beans, tomatoes, passata and water (see quantity above). Cook for 6 minutes until the sauce thickens, then add the Swiss chard and wilt for 1 minute. Season with salt and pepper to taste.

Step 4

Eggs: Using a spoon, make a well for each egg (see quantity above) in the tomato sauce mixture. Crack an egg into each well and season with salt and pepper to taste. Cover with a lid or tin foil and cook for 5 minutes until the white sets, but the yolk (yellow) is still runny.

Step 5

Chilli: Place in a small bowl and cover with a few glugs of olive oil.

Step 6

Serve the tomato sauce mixture topped with a dollop of sour cream and serve baguette slices on the side with the chilli in olive oil.
