Cajun Wraps

Cajun Wraps

Golden wraps topped with sour cream, lettuce, salsa, tender beef and fresh coriander.




Ingredients to serve 2

  • 1 x limes – zest and juice
  • 300g x beef cubes
  • ½ tbsp x Cajun Spice
  • 2 x sweetcorn cobs – remove kernels
  • 2 x tomatoes – dice (½ cm)
  • 1 x spring onions – slice thinly at an angle
  • 2 x wraps
  • 3 tbsp x sour cream
  • ½ x lettuce – slice very finely
  • 5g x fresh coriander – remove leaves, discard stalks
  • butter (from your pantry)
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)

Ingredients to serve 4

  • 2 x limes – zest and juice
  • 600g x beef cubes
  • 1 tbsp x Cajun Spice
  • 4 x sweetcorn cobs – remove kernels
  • 4 x tomatoes – dice (½ cm)
  • 2 x spring onions – slice thinly at an angle
  • 4 x wraps
  • 6 tbsp x sour cream
  • 1 x lettuce – slice very finely
  • 10g x fresh coriander – remove leaves, discard stalks
  • butter (from your pantry)
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)

Method

Step 1

Preparation: Prepare all ingredients as indicated above.

Step 2

Limes: Using the fine side of a box grater, grate the peel to create zest. Cut in half and juice.

Step 3

Beef cubes: Coat with the Cajun Spice, add a drizzle of olive oil and season with salt and pepper. Mix well and set aside.

Step 4

Salsa: Place a pan on medium-high heat with a knob of butter. When the butter has melted, add the sweetcorn kernels and cook for 4-5 minutes. Remove and set aside to cool down slightly, then mix in tomatoes, lime zest and juice (to taste) and spring onions. Season with salt and pepper and add a drizzle of olive oil. Season with salt and pepper.

Step 5

Beef cubes: Place a pan on medium-high heat with a drizzle of olive oil and a knob of butter. When the butter has melted, add the beef cubes and cook for 6-8 minutes until cooked, but still slightly pink inside.

Step 6

Wraps: Place a dry pan on medium-high heat and warm the wraps for 30 seconds a side until golden.

Step 7

Serve by spreading sour cream over the wrap, topped with the shredded lettuce, salsa, beef cubes and coriander.
