Sweet Potato Tacos

Soft baked sweet potatoes topped with Mexican spiced steak mince, grated cheese & zesty tomato salsa.




Ingredients to serve 2

  • 2 x sweet potatoes – cut into quarters (skin on)
  • 250g x steak mince
  • 2 tsp x Mexican Spice Mix
  • ½ sachet x tomato paste
  • 2 x tomatoes – dice (½ cm)
  • 5g x fresh coriander – discard stalks
  • 2 x spring onions – slice thinly at an angle
  • ½ x limes – zest & juice
  • 40g x mature cheddar – grate coarsely
  • 3 tbsp x sour cream
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)
  • tin foil (from your pantry)

  • 4 x sweet potatoes – cut into quarters (skin on)
  • 500g x steak mince
  • 4 tsp x Mexican Spice Mix
  • 1 sachet x tomato paste
  • 4 x tomatoes – dice (½ cm)
  • 10g x fresh coriander – discard stalks
  • 4 x spring onions – slice thinly at an angle
  • 1 x limes – zest & juice
  • 80g x mature cheddar – grate coarsely
  • 6 tbsp x sour cream
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)
  • tin foil (from your pantry)

Method

Step 1

Preparation: Preheat the oven to 200°C. Prepare all ingredients as indicated above.

Step 2

Sweet potatoes: Place on a tin foil lined baking tray with a drizzle of olive oil and season with salt and pepper. Mix, arrange in a single layer and bake for 35-40 minutes until golden and cooked.

Step 3

Steak mince: Place a large pan on medium-high heat with a drizzle of olive oil. When hot, add the mince, season with salt and pepper and break apart with a spoon. Brown for 3 minutes, then add the Mexican Spice Mix. Cook for another 2 minutes before adding the tomato paste and water (1 cup for 4; ½ cup for 2). Cook for 3-4 minutes until the sauce thickens.

Step 4

Tomato salsa: Mix together the tomato, coriander leaves, spring onions and lime zest and juice. Season with salt and pepper to taste.

Step 5

Serve the baked sweet potatoes topped with the spiced mince and grated cheddar. Serve the tomato salsa on the side and add a dollop of sour cream.
