Solo: Tartar Gammon

Gammon steaks served with potato chips a fresh cucumber salad and tangy tartar.

Ingredients to serve 1

  • ¼ x lemon – zest & juice
  • ¼ x cucumber
  • 1 x potato
  • 1½ tbsp x tangy mayonnaise
  • 1 x spring onion – slice thinly at an angle
  • ½ x dill pickles – dice finely
  • 1 x gammon steak
  • ¼ x red onion – peel & chop finely
  • 3g x fresh parsley – chop leaves finely
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)
  • tin foil (from your pantry)


Step 1

Preparation: Preheat the oven to 200°C. For speed, start cooking the potato chips before preparing all ingredients as indicated above.

Step 2

Potato chips: Cut off the ends, then cut them into 1cm slices lengthways and cut those slices into 1cm wide chips. Place the chips on a tin foil lined baking tray. Drizzle with olive oil, season with salt and pepper, mix and then spread in a single layer. Roast for 25 minutes, until golden and cooked.

Step 3

Lemon: Using the fine side of the box grater, grate the peel to create zest. Cut in half and juice.

Step 4

Cucumber: Slice: cut the ends off then slice in half lengthways, scrape out the seeds with a teaspoon. Then slice into 3mm thick slices.

Step 5

Tartar: Mix together the mayonnaise, spring onions, pickles and HALF the lemon juice. Season with black pepper and set aside.

Step 6

Salad: Mix together the cucumber, red onion, parsley, lemon zest, and the REST of the lemon juice. Season with salt and pepper and add a drizzle of olive oil.

Step 7

Gammon: Place a dry pan on high heat. Cut perpendicular slits (about 2cm apart) all the way along the fatty edge of the steak to prevent it from curling up in the pan. Coat with a drizzle of olive oil and season with black pepper (no salt). When the pan is hot, add the gammon and cook for 3-4 minutes a side until golden and cooked through.

Step 8

Serve the gammon with the chips, tartar and the salad on the side.
