Solo: Courgette Noodles

Saucy stir fry with tender chicken fillets, courgette ribbons, green beans and spring onions, served in a bowl.

Ingredients to serve 1

  • 1 tbsp x soy sauce
  • 1 tbsp x apple cider vinegar
  • 1 clove x garlic – peel, grate finely & chop
  • 10g x ginger – peel & chop finely
  • 1 tbsp x Carb Smart sweet chilli sauce
  • 150g x chicken fillets
  • ¼ x red onion – peel & slice thinly
  • 75g x green beans – trim ends & cut in half
  • 1 x spring onion – slice thinly at an angle
  • 2 x courgettes – slice into thin ribbons with potato peeler
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)


Step 1

Preparation: Prepare all ingredients as indicated above.

Step 2

Sauce: Mix together soy sauce, apple cider vinegar, garlic, ginger and Carb Smart sweet chilli sauce. Set aside.

Step 3

Chicken: Place a pan on medium-high heat with a drizzle of olive oil. Season the chicken with salt and pepper, add to the hot pan and cook for 4 minutes until lightly golden, but not cooked through yet. Remove and set aside.

Step 4

Stir-fry: Using the same pan, turn the heat up to high and add a drizzle of olive oil. When hot, add the red onion and green beans and sauté for 3-4 minutes. In the last minute, add the spring onion, courgette ribbons and chicken. Cook until the chicken is cooked through, then mix through the sauce.

Step 5

Serve in a bowl.
