Pimenta Kebabs

Pimenta spiced beef koftas served with fresh tomato salsa, dill yoghurt and toasted pita breads.




Ingredients to serve 2

  • ½ x cucumber
  • 300g x beef mince
  • 1¼ tsp x Pimenta Spice Mix
  • ½ x onion – peel & chop finely
  • 6 x skewers
  • ½ x bell pepper – deseed & dice (½ cm)
  • 5g x fresh coriander – chop leaves finely
  • 5g x fresh dill – chop leaves finely
  • ½ tbsp x red wine vinegar
  • 3 tbsp x yoghurt
  • ½ clove x garlic – peel, grate finely & chop
  • 2 x pita breads
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)

Ingredients to serve 4

  • 1 x cucumber
  • 600g x beef mince
  • 2½ tsp x Pimenta Spice Mix
  • 1 x onion – peel & chop finely
  • 12 x skewers
  • 1 x bell pepper – deseed & dice (½ cm)
  • 10g x fresh coriander – chop leaves finely
  • 10g x fresh dill – chop leaves finely
  • 1 tbsp x red wine vinegar
  • 6 tbsp x yoghurt
  • 1 clove x garlic – peel, grate finely & chop
  • 4 x pita breads
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)

Method

Step 1

Preparation: Preheat the oven to 200°C, for the pita breads. If you would rather use the toaster, no need to preheat the oven. Prepare all ingredients as indicated above.

Step 2

Diced cucumber: Cut the ends off the cucumber, slice in half lengthways and scrape out the seeds with a teaspoon. Then dice the cucumber in ½ cm cubes.

Step 3

Koftas: Mix together the beef mince, Pimenta Spice Mix and onion and season generously with salt and pepper. Divide the mixture into portions (as many portions as you have skewers). Roll each portion into a cigar shape and thread onto a skewer. Add a drizzle of olive oil to a pan on medium-high heat. When hot, add the koftas and cook for 10 minutes, turning them every few minutes to brown all over.

Step 4

Salsa: To make the dressing, whisk together olive oil (1 tbsp for 4; ½ tbsp for 2; ½ tbsp for 1) and red wine vinegar. Then mix together the bell pepper, cucumber, coriander and HALF the dill. Add the dressing, mix through and season with salt and pepper.

Step 5

Dill yoghurt: Mix together yoghurt, the REST of the dill and garlic. Season with salt and pepper.

Step 6

Pita breads: If using the oven, toast for 2 minutes, or pop them in the toaster until golden.

Step 7

Serve the koftas with the salsa, yoghurt dill and cut the pita breads into wedges.
