Nutty Noodles

Noodles and veggies coated in a cashew dressing, topped with tender chicken and bean sprouts.




Ingredients to serve 2

  • 1 x carrots – peel
  • 2 nests x egg noodles
  • 10g x ginger – peel & chop finely
  • 1 clove x garlic – peel, grate finely & chop
  • 1½ tbsp x cashew butter
  • 1 tbsp x sweet chilli sauce
  • 1½ tbsp x soy sauce
  • 1½ tbsp x water (for the sauce)
  • 300g x chicken fillets
  • ½ x red onion – peel & slice thinly
  • 100g x green beans – trim ends & cut in half
  • 15g x bean sprouts
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)

Ingredients to serve 4

  • 2 x carrots – peel
  • 4 nests x egg noodles
  • 20g x ginger – peel & chop finely
  • 2 cloves x garlic – peel, grate finely & chop
  • 3 tbsp x cashew butter
  • 2 tbsp x sweet chilli sauce
  • 3 tbsp x soy sauce
  • 3 tbsp x water (for the sauce)
  • 600g x chicken fillets
  • 1 x red onion – peel & slice thinly
  • 200g x green beans – trim ends & cut in half
  • 30g x bean sprouts
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)

Method

Step 1

Preparation: Prepare all ingredients as indicated above.

Step 2

Carrot matchsticks: Cut in half crossways, then slice each piece lengthways (5mm). Finally place each piece down flat and cut lengthways again into matchsticks (about 5mm wide).

Step 3

Egg noodles: Boil the kettle. Place the egg noodles in a bowl and pour over boiling water (enough to cover). Let the noodles sit for 13-15 minutes until softened. Drain.

Step 4

Sauce: Mix together the ginger, garlic, cashew butter, sweet chilli sauce, soy sauce and water (see quantity above).

Step 5

Chicken: Place a pan on medium-high heat with a drizzle of olive oil. Season the chicken with salt and pepper and add to the hot pan. Cook for 5 minutes until golden and cooked through, then remove, set aside and turn the heat up to high.

Step 6

Veggies: Using the same pan on high heat, add the onion with a drizzle of olive oil and a pinch of salt. Add the green beans and carrots and sauté for 4-5 minutes until cooked, but with a slight bite. Then add the egg noodles and the sauce and mix through.

Step 7

Serve in a bowl topped with the chicken and bean sprouts.
