Chevin Skillet

Lentils and stir-fried veggies topped with slices of Fairview chevin.




Ingredients to serve 2

  • ½ cup x brown lentils – rinse
  • 2 cups x boiling water (for the lentils)
  • ½ x red onion – peel & chop finely
  • 10g x ginger – peel & chop finely
  • 2 sticks x celery – slice thinly
  • ½ x bay leaf
  • ½ tsp x garam masala
  • 1 tbsp x cranberries
  • 50g x Swiss chard – slice into ribbons, discard stalks
  • 50g x red spinach
  • 50g x Fairview chevin (goat’s cheese) – slice (½ cm)
  • butter (from your pantry)
  • salt & pepper (from your pantry)
  • olive oil (from your pantry)

  • 20g x ginger – peel & chop finely
  • 4 sticks x celery – slice thinly
  • 1 x bay leaf
  • 1 tsp x garam masala
  • 2 tbsp x cranberries
  • 100g x Swiss chard – slice into ribbons, discard stalks
  • 100g x red spinach
  • 100g x Fairview chevin (goat’s cheese) – slice (½ cm)
  • butter (from your pantry)
  • salt & pepper (from your pantry)
  • olive oil (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any pantry items. Boil a kettle of water for use later.

Washing Instruction

Wash your hands and celery well. Rinse your red spinach and swiss chard thoroughly and drain on paper towel.

Chevin has about half the fat, cholesterol, and calories of cream cheese made from cow’s milk, which it sometimes resembles in texture.

Step 1 - Lentils

Place a pot on medium-high heat and add boiling water (No salt). Add the lentils and boil gently for 15-20 minutes until tender. Drain and season with a little salt.

Step 2 - Veggies

Place a pan on medium-high heat with a drizzle of olive oil and a knob of butter. When the butter has melted, add the red onion, ginger, celery, bay leaf, garam masala and cranberries and sauté for 5 minutes until fragrant. Add the Swiss chard and red spinach and wilt for 30 seconds. Season with salt and pepper.

To Serve

Mix the lentils through the veggies and top with the chevin slices and divide amongst your servings.
