Ingredients to serve 4

  • 4 x boneless pork chops
  • 1 tsp x Chinese five spice
  • ½ tsp x ground cinnamon
  • 1 tbsp x hoisin sauce
  • 2 tbsp x soy sauce
  • 2 tbsp x xylitol (for the marinade)
  • 2 tbsp x honey
  • 2 tsp x rice wine
  • 40g x fresh ginger – grate finely
  • 1 clove x garlic – crush, peel and chop finely

  • 1 tbsp x tap water
  • 2 tsp x xylitol (for the salad dressing)
  • 1 x red onion – slice finely
  • 1 x fresh chilli – slice finely
  • 1 x cucumber – slice
  • 10g x fresh mint – strip off leaves and chop
  • . x olive oil (from your pantry)

Method

Step 1

Preheat oven to 200⁰C. Prepare all ingredients as indicated above.

Step 2

Make the marinade for the chops by mixing these ingredients in a large flat bowl/casserole dish: Chinese five spice, cinnamon, hoisin sauce, soy sauce, xylitol (see quantity above for the marinade), honey, rice wine, fresh ginger, garlic.

Step 3

Place a large frying pan or griddle pan on medium to high heat. Lay the chops out on a chopping board and drizzle with a little olive oil. Using your hands, rub the oil all over the chops and repeat on the other side. When the pan is hot (it should be hot enough that the meat sizzles when it hits the pan), sear the chops in the pan for about 2 minutes on each side. Remove from heat. Dip the chops in the marinade until well coated, then place in an ovenproof dish (or baking tray). Drizzle with a little more of the marinade and place in the oven for 10 minutes. Remove from oven and set aside.

Step 4

Make salad dressing by mixing these ingredients in a cup/jug: fish sauce, lime juice, tap water, xylitol (see quantity for salad dressing above). Put the red onion, cucumber, mint and chilli in a salad bowl. Drizzle the salad dressing over the top and toss well to coat.

Step 5

To serve, divide the pork chops between the plates and drizzle some marinade over the top. Add a serving of cucumber salad on the side.
