Sausage Rolls

Fresh hotdog rolls topped with tasty pork bangers and mayonnaise sauce, served with chips and slaw.




Ingredients to serve 2

  • ½ x lemon – zest & juice
  • 2 x potatoes
  • 4 x pork bangers
  • 1½ tbsp x mayonnaise
  • 1½ tbsp x ketchup
  • 1⁄16 x cabbage – slice very finely
  • 1 x carrots – peel & grate coarsely
  • ½ x beetroot – peel & grate coarsely
  • 2 x spring onions – slice thinly at an angle
  • 4 x hot dog rolls
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)
  • tin foil (from your pantry)

  • 3 tbsp x mayonnaise
  • 3 tbsp x ketchup
  • ⅛ x cabbage – slice very finely
  • 2 x carrots – peel & grate coarsely
  • 1 x beetroot – peel & grate coarsely
  • 4 x spring onions – slice thinly at an angle
  • 8 x hot dog rolls
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)
  • tin foil (from your pantry)

Method

Step 1

Preparation: Preheat the oven to 200°C. Prepare all ingredients as indicated above.

Step 2

Lemon: Using the fine side of a box grater, grate the peel to create zest. Cut in half and juice.

Step 3

Potato chips & bangers (sausages): Cut off the ends of the potatoes, then cut them into 1cm slices lengthways and cut those slices into 1cm chips. Place the chips on a tin foil lined baking tray. Drizzle with olive oil, season with salt and pepper, mix and then spread in a single layer. Roast for 5 minutes, then add the pork bangers on a separate tray with a drizzle of olive oil and a little salt and pepper. Roast for 20 minutes until the chips are golden and cooked and the bangers are golden and cooked through.

Step 4

Sauce: Mix together the mayonnaise and ketchup.

Step 5

Dressing: Whisk together lemon juice (4 tbsp for 4; 2 tbsp for 2) and olive oil (2 tbsp for 4; 1 tbsp for 2).

Step 6

Slaw: Mix together the cabbage, carrots, beetroot and spring onions. Add the dressing and mix through. Season generously to taste.

Step 7

Hot dog rolls: In the last 5-10 minutes of cooking the bangers and potatoes, place the rolls in the oven until golden and crusty.

Step 8

Serve the rolls topped with the pork bangers and sauce, and serve the slaw and potato chips on the side.
