Method
Step 1
Preparation: Preheat the oven to 180°C. Prepare all ingredients as indicated above.
Step 2
Baguette: Warm in the oven for 10 minutes until golden and crusty.
Step 3
Beef bangers: Place a pan on medium-high heat with a drizzle of olive oil. When hot, add the bangers and brown for 3-5 minutes. Remove and set aside.
Step 4
Tomato sauce: Using the same pan on medium-high heat, add a drizzle of olive oil. When hot, add the onion with a pinch of salt and cook for 5 minutes. Add garlic, nutmeg, mixed herbs and tomato paste and cook for 30 seconds. Then add the tomato, passata, water (see quantity above) and bangers. Cook for 6 minutes until the sauce thickens and the bangers are cooked through, then add the Swiss chard and wilt for 1 minute. Season with salt and pepper to taste.
Step 5
Egg: Using a spoon, make a well for the egg in the tomato sauce mixture. Crack the egg into the well and season with salt and pepper to taste. Cover with a lid or tin foil and cook for 5 minutes until the white sets, but the yolk (yellow) is still runny.
Step 6
Chilli: Place in a small bowl and cover with a few glugs of olive oil.
Step 7
Serve the tomato sauce mixture topped with a dollop of sour cream. Serve slices of the baguette and chilli in olive oil on the side.
