Solo: Baked Sausages

Tomato sauce with beef bangers and delicious baked eggs served with a dollop of sour cream and chilli.

Ingredients to serve 1

  • 2 x beef bangers
  • ¼ x onion – peel & chop finely
  • ½ clove x garlic – peel, grate finely & chop
  • ⅛ tsp x nutmeg
  • ¼ tsp x mixed herbs
  • ¼ sachet x tomato paste
  • ½ x tomato – dice (1cm)
  • ¼ cup x passata
  • ¼ cup x water (for the tomato sauce)
  • 50g x Swiss chard – remove stalks & slice (1cm)
  • 1 x egg (from your pantry)
  • ¼ x fresh chilli (optional) – deseed & chop finely
  • 1 tbsp x sour cream
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)
  • tin foil (from your pantry)


Step 1

Preparation: Prepare all ingredients as indicated above.

Step 2

Beef bangers: Place a pan on medium-high heat with a drizzle of olive oil. When hot, add the bangers and brown for 3-5 minutes. Remove and set aside.

Step 3

Tomato sauce: Using the same pan on medium-high heat, add a drizzle of olive oil. When hot, add the onion with a pinch of salt and cook for 5 minutes. Add garlic, nutmeg, mixed herbs and tomato paste and cook for 30 seconds. Then add the tomato, passata, water (see quantity above) and bangers. Cook for 6 minutes until the sauce thickens and the bangers are cooked through, then add the Swiss chard and wilt for 1 minute. Season with salt and pepper to taste.

Step 4

Egg: Using a spoon, make a well for the egg in the tomato sauce mixture. Crack the egg into the well and season with salt and pepper to taste. Cover with a lid or tin foil and cook for 5 minutes until the white sets, but the yolk (yellow) is still runny.

Step 5

Chilli: Place in a small bowl and cover with a few glugs of olive oil.

Step 6

Serve the tomato sauce with the baked egg, topped with a dollop of sour cream and serve the chilli in olive oil on the side.
