Method
Step 1
Preparation: Boil the kettle. Prepare all ingredients as indicated above.
Step 2
Veggie mix: Place a pan on medium-high heat with a knob of butter. When the butter has melted, add the onion with a pinch of salt and cook for 5 minutes. Then add garlic, ginger, the Khusha Spice Mix, chilli (if you like a bit of spice) and tomato paste. Cook for 30 seconds before adding the tomatoes, lentils and boiling water (see quantity above for the veggie mix). Cook for 10 minutes until the lentils are soft, but not falling apart. Add the Swiss chard, wilt for 1 minute and season with salt and pepper to taste.
Step 3
Rotis: Place a pan on medium-high heat and dry toast the rotis for 30 seconds a side until warm.
Step 4
Serve the veggie mix topped with a dollop of sour cream and the roti on the side.
