Cheesy Fries

Homemade baked potato chips topped with a Mexican Bolognese, lots of cheddar & fresh coriander.




Ingredients to serve 2

  • 2 x potatoes
  • ½ x onion – peel & chop finely
  • ½ tbsp x Pimento Blend
  • 300g x beef mince
  • 2 x tomatoes – dice (1 cm)
  • ½ sachet x tomato paste
  • 50g x cheddar – grate coarsely
  • 5g x fresh coriander – chop leaves roughly
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)
  • tin foil (from your pantry)

Ingredients to serve 4

  • 4 x potatoes
  • 1 x onion – peel & chop finely
  • 1 tbsp x Pimento Blend
  • 600g x beef mince
  • 4 x tomatoes – dice (1 cm)
  • 1 sachet x tomato paste
  • 100g x cheddar – grate coarsely
  • 10g x fresh coriander – chop leaves roughly
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)
  • tin foil (from your pantry)

Method

Step 1

Preparation: Preheat the oven to 200°C. Prepare all ingredients as indicated above.

Step 2

Potato chips: Cut off the ends, then cut them into 1cm slices lengthways and cut those slices into 1cm chips. Place the chips on a tin foil lined baking tray. Drizzle with olive oil, season with salt and pepper, mix and then spread in a single layer. Roast for 25 minutes, until golden and cooked.

Step 3

Mince mix: Place a pan on medium-high heat with a drizzle of olive oil. Add the onion with a pinch of salt and sauté for 5 minutes. Add the Pimento Blend and stir around for 1 minute before adding the mince. Cook, breaking it up with a spoon for 4-5 minutes until the mince is golden brown. Then add the tomato paste, tomatoes and water (¼ cup for 4; ⅛ cup for 2) and season with salt and pepper. Cook for 10 minutes until the sauce thickens.

Step 4

Serve by arranging the potato chips in a circle with a well in the middle. Fill the well with the mince mix, topped with cheddar and fresh coriander.
