Method
Step 1
Preparation: Preheat the oven to 200°C. Prepare all ingredients as indicated above.
Step 2
Sweet potato chips: Cut off the ends, then cut them into 1cm slices lengthways and cut those slices into 1cm chips. Place the chips on a tin foil lined baking tray. Drizzle with olive oil, season with salt and pepper, mix and then spread in a single layer. Roast for 25 minutes, until golden and cooked.
Step 3
Mince mix: Place a pan on medium-high heat with a drizzle of olive oil. Add the onion with a pinch of salt and sauté for 5 minutes. Add the Cajun Spice and stir around for 1 minute before adding the mince. Break it up with a spoon and cook for 3-4 minutes until the mince is golden brown and cooked, then add the tomatoes and water (¼ cup for 4; ⅛ cup for 2; ⅛ cup for 1) and season with salt and pepper. Add the tomato paste and liquid from the smoked jalapenos, and stir for another 10 minutes until the sauce thickens.
Step 4
Serve by arranging the sweet potato chips in a circle with a well in the middle. Fill the well with the mince mix topped with cheddar, sliced jalapenos and fresh coriander.
