Exotic Mushroom Barley

Mushrooms cooked with onion, thyme & cumin, mixed through barley & topped with fresh dill.




Ingredients to serve 2

  • ¾ cup x barley
  • ½ x onion – peel & chop finely
  • 200g x mixed mushrooms
  • 3g x fresh thyme – chop leaves finely
  • ½ clove x garlic – peel, grate finely & chop
  • ½ tsp x cumin seeds
  • ¼ tsp x chilli flakes (optional)
  • 2 tsp x red wine vinegar
  • 3g x fresh dill – chop leaves roughly
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)

  • 1½ cups x barley
  • 1 x onion – peel & chop finely
  • 400g x mixed mushrooms
  • 5g x fresh thyme – chop leaves finely
  • 1 clove x garlic – peel, grate finely & chop
  • 1 tsp x cumin seeds
  • ½ tsp x chilli flakes (optional)
  • 4 tsp x red wine vinegar
  • 5g x fresh dill – chop leaves roughly
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)

Method

Step 1

Preparation: Boil the kettle. Prepare all ingredients as indicated above.

Step 2

Barley: Place a pot on medium-high heat, add the barley and pour in boiling water (enough to cover by 5cm, no salt). Bring to the boil and cook for 25-30 minutes until cooked, but with a slight bite. Drain. Season with salt.

Step 3

Mixed mushrooms: Slice the larger mushrooms thinly, including the stalks, and separate the shimeji mushrooms (smaller mushrooms).

Step 4

Exotic mushrooms: Place a pan on medium-high heat with a drizzle of olive oil. Add the onion with a pinch of salt and cook for 5 minutes until golden and softened. Remove and set aside. Using the same pan on medium-high heat, add a drizzle of olive oil. Add the mushrooms (in batches, so you don’t overcrowd the pan) and cook for 5-6 minutes until golden. In the last couple of minutes, add the thyme, garlic and cumin seeds. Mix in the onion, barley and red wine vinegar. Cook for another 1-2 minutes, add the chilli flakes (if you like a little spice) and season with salt and pepper.

Step 5

Serve topped with the fresh dill.
