Stuffed Tortillas

Golden toasted tortillas topped with a tomato salad, meatballs, and hummus.




Ingredients to serve 2

  • 1 x cucumbers
  • 300g x beef mince
  • ½ tbsp x ras-el-hanout
  • ½ x red onion – peel & chop finely
  • 3g x fresh parsley – chop leaves finely
  • ½ tbsp x red wine vinegar
  • 2 x tomatoes – dice (½ cm)
  • ½ tbsp x oregano
  • 2 x tortilla wraps
  • 60ml x hummus
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)

Ingredients to serve 4

  • 2 x cucumbers
  • 600g x beef mince
  • 1 tbsp x ras-el-hanout
  • 1 x red onion – peel & chop finely
  • 5g x fresh parsley – chop leaves finely
  • 1 tbsp x red wine vinegar
  • 4 x tomatoes – dice (½ cm)
  • 1 tbsp x oregano
  • 4 x tortilla wraps
  • 120ml x hummus
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)

Method

Step 1

Preparation: Prepare all ingredients as indicated above.

Step 2

Diced cucumber: Cut the ends off the cucumber, slice in half lengthways and scrape out the seeds with a teaspoon. Then dice the cucumber in ½ cm cubes.

Step 3

Meatballs: Mix together the beef mince, ras-el-hanout, HALF the red onion and parsley, season generously with salt and pepper. Shape the mixture into golf ball sized meatballs. Add a drizzle of olive oil to a pan on medium-high heat. When hot, add the meatballs and cook for 8-10 minutes, until lightly browned and cooked through. Move them around in the pan to make sure they brown evenly.

Step 4

Salad: For the dressing, whisk together olive oil (1 tbsp for 4; ½ tbsp for 2) and red wine vinegar. Season with salt and pepper. Mix together the tomatoes, cucumbers, oregano and the REST of the red onion, then add the dressing and mix through.

Step 5

Tortilla wraps: Place in a dry pan on medium-high heat and warm for 30 seconds a side until golden.

Step 6

Serve by spreading the hummus over the tortilla, then top with the salad and meatballs and wrap it up.
