Method
Step 1
Preparation: Boil the kettle. Prepare all ingredients as indicated above.
Step 2
Carrot matchsticks: First cut each carrot in half crossways, then slice each piece in half lengthways (5mm). Finally place each piece down flat and cut lengthways again into matchsticks (about 5mm wide).
Step 3
Egg noodles: Place the egg noodles in a bowl and pour over boiling water (enough to cover). Let the noodles sit for 13-15 minutes until softened. Drain.
Step 4
Sauce: Boil the kettle. Mix together the tahini, boiling water (5 tbsp for 4; 2½ tbsp for 2), soy sauce, garlic, sesame oil, honey and rice wine vinegar.
Step 5
Stir-fry: Place a pan on medium-high heat with a drizzle of olive oil. Add the gammon and sauté for 2-3 minutes until golden. Then add the broccoli and cook for another 2-3 minutes until bright green. Add the carrots and stir-fry for 2 minutes until the broccoli and carrots are cooked, but with a slight bite. Add HALF the sauce to the stir-fry and mix through.
Step 6
Noodles: Just before serving, add the REST of the sauce to the noodles, , then mix the noodles through the stir-fry.
Step 7
Serve in a bowl with a squeeze of lime and top with the peanuts.
