Saucy Beef Burger

Homemade rosemary patty topped with garlic mustard mayo & slow cooked sweet caramalised red onion.




Ingredients to serve 2

  • 1 x carrots – trim ends & peel
  • 1 x sweet potatoes
  • 1 x red onions – peel & slice thinly
  • 3 tbsp x mayonnaise
  • ½ tsp x Dijon mustard
  • 1 tsp x Worcestershire sauce
  • 300g x beef mince
  • 3g x fresh rosemary – chop leaves finely
  • 2 x ciabatta rolls
  • 40g x baby spinach
  • 1 x tomatoes – slice thinly
  • butter (from your pantry)
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)
  • tin foil (from your pantry)

Ingredients to serve 4

  • 2 x carrots – trim ends & peel
  • 2 x sweet potatoes
  • 2 x red onions – peel & slice thinly
  • 6 tbsp x mayonnaise
  • 1 tsp x Dijon mustard
  • 2 tsp x Worcestershire sauce
  • 600g x beef mince
  • 5g x fresh rosemary – chop leaves finely
  • 4 x ciabatta rolls
  • 80g x baby spinach
  • 2 x tomatoes – slice thinly
  • butter (from your pantry)
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)
  • tin foil (from your pantry)

Method

Step 1

Preparation: Preheat the oven to 200°C. Prepare all ingredients as indicated above.

Step 2

Sweet potato & carrot chips: First cut each carrot in half crossways, then slice each piece into 1cm slices lengthways. Lay them down flat and cut into 1cm chips. Cut off the ends of the sweet potato, then cut them into 1cm slices lengthways and cut those slices into 1cm chips. Place all the chips on a tin foil lined baking tray. Drizzle with olive oil, season with salt and pepper, mix and then spread in a single layer. Roast for 25 minutes, until golden and cooked.

Step 3

Caramelised onion: Place a pan on low-medium heat with a generous knob of butter. When the butter has melted, add the onion with a pinch of salt. Cook for 20 minutes, stirring every now and then, until soft and slightly sweet.

Step 4

Mayo sauce: Mix together the mayonnaise, Dijon mustard and Worcestershire sauce. Set aside.

Step 5

Patties: Mix together the beef mince and fresh rosemary, season generously with salt and pepper and shape into patties (1 per person). Add a drizzle of olive oil to a pan on medium-high heat. When hot, add the patties (they should sizzle when they hit the pan) and cook for 4-6 minutes per side, until cooked to your preference. Remove from the pan and discard some of the fat.

Step 6

Ciabatta rolls: Bake for 5-10 minutes in the oven until warm and crusty. Remove and slice in half and toast for 1 minute in the pan you used for the patties.

Step 7

Serve the bottom half of the ciabatta roll topped with the mayo sauce, patty, caramelised onion, baby spinach and tomato slices. Top with the other half of the ciabatta roll and serve the sweet potato and carrot chips on the side.
