Solo: Carne Tortilla

Warm tortilla wraps topped with fresh lettuce, a spicy mince mix, cheddar and salsa.

Ingredients to serve 1

  • ¼ x onion – peel & chop finely
  • 125g x beef mince
  • 1 tsp x Taco Seasoning
  • ½ clove x garlic – peel, grate finely & chop
  • 1 x tomato – dice (½ cm)
  • 1 x tortilla wrap
  • 1 x spring onion – slice thinly at an angle
  • ¼ head x lettuce – slice very thinly
  • 25g x mature cheddar – grate coarsely
  • 3g x fresh coriander – remove leaves, discard stalks
  • salt & black pepper (from your pantry)
  • olive oil (from your pantry)


Step 1

Preparation: Prepare all ingredients as indicated above.

Step 2

Mince mix: Place a pan on medium-high heat with a drizzle of olive oil. Add the onion with a pinch of salt and cook for 5 minutes. Add the mince with a generous seasoning of salt and pepper, the Taco Seasoning and garlic and break it up with a spoon. Sauté for 30 seconds, then add HALF the tomatoes and water (½ cup for 4; ¼ cup for 2; ⅛ cup for 1). Simmer (gently boil) for 10 minutes until the tomatoes soften and the sauce thickens.

Step 3

Tortilla wrap: Place in a dry pan on medium-high heat and warm for 30 seconds a side until golden.

Step 4

Salsa: Mix together spring onions and the REST of the tomatoes. Season with salt and pepper.

Step 5

Serve the tortilla wrap topped with the lettuce, mince mix, cheddar and salsa. Sprinkle over the fresh coriander leaves.
