Bacon Stroganoff Pasta

A creamy smoked paprika & thyme-infused sauce with bacon and mushrooms served with linguine.




Ingredients to serve 2

  • 150g x linguine
  • ½ x red onion – peel & chop finely
  • ½ clove x garlic – peel, grate finely & chop
  • 1 tsp x smoked paprika
  • ¼ tsp x chilli flakes (optional)
  • 3g x fresh thyme – chop leaves finely
  • 150g x bacon bits
  • 125g x button mushrooms – slice thinly
  • 2 tbsp x sour cream
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)

  • 300g x linguine
  • 1 x red onion – peel & chop finely
  • 1 clove x garlic – peel, grate finely & chop
  • 2 tsp x smoked paprika
  • ½ tsp x chilli flakes (optional)
  • 5g x fresh thyme – chop leaves finely
  • 300g x bacon bits
  • 250g x button mushrooms – slice thinly
  • 4 tbsp x sour cream
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Bring a medium saucepan of salted water to the boil for use in Step 1.

Washing Instruction

Wash your hands well. Rinse your fresh thyme thoroughly and drain on paper towel. Brush your mushrooms with a soft basting brush.

A tip straight from my Mama...To save time and energy when boiling pasta use your kettle to boil your water then add it to your pan/pot.....Mammmaaa knows best.

Step 1 - Linguine

Once your water in a medium saucepan has come to the boil, cook your linguine for 10-12 minutes until al dente. Drain through a colander once done and reserve for later.

Step 2 - Stroganoff Mixture

Place a pan on medium-high heat with a drizzle of olive oil. Add the onion with a pinch of salt and cook for 5 minutes before adding the garlic, smoked paprika, chilli flakes (if you like a bit of spice) and thyme. Sauté for 1 minute, then add the bacon and cook for 4-5 minutes until golden. Add the mushrooms and cook for another 4-5 minutes, then pour in the sour cream and water (½ cup for 4; ¼ cup for 2) and let it simmer for 2-3 minutes until the sauce thickens. Mix through the linguine and a little pasta water to loosen.

To Serve

Serve your bacon stroganoff pasta immediately while hot.
