Chilli Con Carne

A spicy mix of lean steak mince and red kidney beans flavoured with garlic, marjoram, chilli, paprika and cumin and served atop fragrant basmati rice with a dollop of soured cream.




Ingredients to serve 2

  • 1/2 x red onion - peel and chop finely
  • 1/2 x red pepper - de-seed and chop
  • 1/2 400g can x kidney beans - drain
  • 1 clove x garlic - crush, peel and chop finely
  • 250g x lean steak mince
  • 1/2 400g can x tomatoes
  • 1/2 tsp of each x marjoram, chilli powder, paprika, cumin
  • 1 tsp x beef stock granules
  • 1/2 cup x boiling water
  • 1/2 tsp x sugar (from your pantry)
  • 1 tbsp x tomato purée
  • 1/2 cup x basmati rice
  • 100ml x sour cream
  • olive oil, salt & pepper

  • 1 x red onion - peel and chop finely
  • 1 x red pepper - de-seed and chop
  • 400g can x kidney beans - drain
  • 2 cloves x garlic - crush, peel and chop finely
  • 500g x lean steak mince
  • 400g can x tomatoes
  • 1 tsp of each x marjoram, chilli powder, paprika, cumin
  • 2 tsp x beef stock granules
  • 1 cup x boiling water
  • 1 tsp x sugar (from your pantry)
  • 2 tbsp x tomato purée
  • 1 cup x basmati rice
  • 200ml x sour cream
  • olive oil, salt & pepper

Method

Step 1

Bring a saucepan of lightly salted water to the boil. Add the rice and boil gently for 15 minutes. Once cooked, drain and keep warm in a colander over a saucepan of hot water.

Step 2

Put a pan with a few glugs of olive oil on medium heat. Add the onions and cook for about 4 minutes until translucent. Stir in the garlic, red pepper, chilli powder, paprika and cumin. Cook for another 2 minutes.

Step 3

Turn the heat up a bit, add the mince to the pan and break it up with a spoon. Cook the mince for about 5 minutes – make sure the heat is hot enough for the meat to fry and become brown. Dissolve the beef stock granules in boiling water. Add to the mince along with the tomatoes, tomato purée, marjoram, sugar, salt and pepper. Turn the heat right down and simmer gently for 20 minutes.

Step 4

Lastly add the kidney beans and heat through. Then turn off the heat and leave the chilli con carne to stand (with the lid on) for 10 minutes before serving.

Step 5

Serve chilli con carne atop basmati rice with a dollop of sour cream.
