Pesto Mushroom Burgers

Roasted mushroom on a ciabatta roll, topped with pesto, sweet pickled chillies and feta on a bed of baby spinach. Super healthy and super yum.

Ingredients to serve 2

  • 2 x large mushrooms
  • 1 tsp x garlic powder
  • 2 x ciabatta rolls
  • 20g x baby spinach leaves
  • 100g x sweet pickled chillies
  • 2 tbsp x basil pesto
  • 50g x feta cheese - crumble
  • . x olive oil, salt & pepper (from your pantry)

Ingredients to serve 4

  • 4 x large mushrooms
  • 2 tsp x garlic powder
  • 4 x ciabatta rolls
  • 40g x baby spinach leaves
  • 200g x sweet pickled chillies
  • 4 tbsp x basil pesto
  • 100g x feta cheese - crumble
  • . x olive oil, salt & pepper (from your pantry)


Step 1

Prepare ingredients as indicated above. Preheat the oven to 200⁰C.

Step 2

Place the mushrooms on a baking tray drizzle with a little olive oil and scatter with garlic powder, freshly ground salt and pepper. Place in hot oven and bake for 15 to 20 minutes.

Step 3

Slice rolls in half and toast under the grill until lightly brown.

Step 4

To assemble, place a bed of baby spinach leaves on the bottom half of each roll. Add a roasted mushroom. Top with pesto, sweet chillies and crumbled feta.
