Method
Step 1
Preparation: Prepare all ingredients as indicated above.
Step 2
Lemon: Using the fine side of a box grater, grate the peel to create zest. Cut in half and juice.
Step 3
Black Beans, Sausage & kale:Heat a medium frying pan over low-medium heat, add a drizzling of olive oil and then proceed to fry your drained black beans for 4-5 minutes until slightly crispy, taste and season with salt and pepper and reserve for later.
Place a pan on medium-high heat with a drizzle of olive oil. Squeeze the meat out of the bangers into the pan and break it apart with a spoon. Season with salt and pepper, sprinkle in the atchar masala, and cook for 5 minutes then add your white wine and white wine vinegar and allow to reduce slightly. Add the tenderstem broccoli and cook for another 5 minutes until bright green and cooked, but with a slight bite. Add the kale, lemon zest, and water (2 tbsp for 4; 1 tbsp for 2) and cook for 3 minutes until the kale has wilted. Once done mix through your cooked black beans.
Step 4
Fried eggs:Heat a large frying pan over med-high heat, preferably non-stick, once your pan is warming up add a little olive oil, and crack your eggs into the pan (you could use a smaller pan and do each egg one by one if you would like to have a perfectly shaped egg) then cook for 4-5 minutes to medium sunny-side up. You could, however, cook your eggs any which way you choose.
Step 5
Serve topped with the fried eggs, hard cheese and a lemon wedge on the side.
