Egg Fried Quinoa

Egg Fried Quinoa

Teriyaki marinated beef with stir-fried carrots & green beans, served with egg-fried quinoa.




Ingredients to serve 2

  • 250g x beef strips – rinse & dry
  • 2 tbsp x teriyaki sauce
  • ½ tbsp x sesame oil
  • ½ cup x quinoa – rinse
  • ½ x onion – peel & slice thinly
  • ½ x carrot – trim ends, peel & dice
  • 100g x green beans – trim ends, cut into pieces (2-3cm)
  • 1 clove x garlic – peel, grate finely & chop
  • 1 sachet x honey
  • 2 x large eggs (from your pantry) – beat lightly
  • 2 x spring onions – slice thinly at an angle
  • 5g x fresh coriander – discard stalks
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)

Ingredients to serve 4

  • 500g x beef strips – rinse & dry
  • 4 tbsp x teriyaki sauce
  • 1 tbsp x sesame oil
  • 1 cup x quinoa – rinse
  • 1 x onion – peel & slice thinly
  • 1 x carrot – trim ends, peel & dice
  • 200g x green beans – trim ends, cut into pieces (2-3cm)
  • 2 cloves x garlic – peel, grate finely & chop
  • 2 sachets x honey
  • 3 x large eggs (from your pantry) – beat lightly
  • 4 x spring onions – slice thinly at an angle
  • 10g x fresh coriander – discard stalks
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)

Method

Step 1

Preparation: Boil the kettle. Marinate the beef strips before preparing all ingredients as indicated above.

Step 2

Marinated beef strips: Mix the beef strips with HALF the teriyaki sauce and sesame oil and set aside to marinate.

Step 3

Quinoa: Place a pot on medium-high heat and add the quinoa with boiling water (2 cups for 4; 1 cup for 2) with a pinch of salt. Bring to the boil and cover, turn down the heat and simmer (gently boil) for 15 minutes, until all the water is absorbed. Drain if there is any excess water.

Step 4

Teriyaki stir-fry: Place a pan on high heat with a drizzle of olive oil. Add the onion with a pinch of salt and cook for 2 minutes. Add the marinated beef strips and cook, stirring around, for 2 minutes before adding the carrots, green beans and garlic. Cook for another 3-4 minutes until the green beans are cooked, but with a slight bite and the meat is cooked through, but still slightly pink. In the last minute, add the REST of the teriyaki sauce, mix in the honey and season with salt and pepper. Remove, set aside and keep warm.

Step 5

Egg-fried-quinoa: Using the same pan on medium-high heat, add the quinoa and sauté for 2 minutes. Move the quinoa to the side of the pan, pour in the beaten egg and scramble. Add the spring onions and mix everything in with the egg.

Step 6

Serve the teriyaki stir-fry with the quinoa and top with fresh coriander.
