Sweet & Sour Noodles

Sweet & sour marinated beef with egg noodles & a cucumber, carrot & bell pepper salad.




Ingredients to serve 2

  • 1 clove x garlic – peel, grate finely & chop
  • 2 tbsp x sweet & sour sauce
  • 2 tbsp x oyster sauce
  • 15g x ginger – peel & chop finely
  • 300g x beef strips – season with salt & pepper
  • ½ x cucumber – slice thinly & cut slices into quarters
  • 1 x carrots – peel & trim ends
  • ½ x bell pepper – deseed & slice (½ cm)
  • 2 nests x egg noodles
  • 20g x peanuts – chop roughly
  • 3 tbsps x Corn Flour
  • Sunflower Oil (from your pantry)
  • olive oil (from your pantry)
  • Salt and Pepper (from your pantry)

  • 4 tbsp x oyster sauce
  • 30g x ginger – peel & chop finely
  • 600g x beef strips – season with salt & pepper
  • 1 x cucumber – slice thinly & cut slices into quarters
  • 2 x carrots – peel & trim ends
  • 1 x bell pepper – deseed & slice (½ cm)
  • 4 nests x egg noodles
  • 40g x peanuts – chop roughly
  • 6 tbsps x Corn Flour
  • Sunflower Oil (from your pantry)
  • olive oil (from your pantry)
  • Salt and Pepper (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any pantry items. Boil a kettle of water for use later.

Washing Instruction

Wash your hands, cucumber, carrots and bell pepper well.

Gino's Tip

Cut the ends off of the bell pepper, then slice the four edges around the seeds. Cut these edges in half crossways, then lay them down flat and cut lengthways into matchsticks. Discard the core of any seeds.

Step 1 - Sweet & Sour Sauce

Mix together the garlic, sweet & sour sauce, oyster sauce and ginger.

Step 2 - Egg Noodles

Place the noodles in a bowl, cover with boiling water and soak for 13-15 minutes until cooked, but with a slight bite. Drain. Using the same pan you used for the beef, turn the heat down to low. Add water (2 tbsp for 4; 1 tbsp for 2) and the egg noodles and mix through.

Step 3 - Cucumber Salad

Mix together the cucumber, carrots and bell pepper slices.

Step 4 - Beef Stir-Fry

Season your beef strips with salt and pepper then coat in your cornflour. Proceed to shallow fry your beef strips in a large casserole pan over a medium-high heat, works best if your oil is heated in the pan before adding your beef strips. Remember not to overcrowd your pan and transfer your crisp beef to a plate lined with paper towel. Once done, decant the oil in your pan add a good few dashes of olive oil, add your sauce and once it bubbles vigorously add your cooked noodles and fry and mix for 1-2 minutes.

To Serve

Mix the beef through the egg noodles, top with the peanuts and serve the salad on the side.
