Chorizo Pasta

Spanish inspired pasta dish - chorizo sausage in a tomato and cream sauce with fresh rosemary and parmesan.




Ingredients to serve 2

  • 200g x penne pasta
  • 2 cloves x garlic – crush, peel & chop finely
  • 3g x fresh rosemary – chop finely
  • 2 x chorizo sausages – slice finely
  • 1 tin x chopped tomato
  • 100ml x cream
  • 5g x fresh parsley – chop
  • 20g x parmesan cheese – grate finely
  • . x olive oil, salt & pepper (from your pantry)

Ingredients to serve 4

  • 400g x penne pasta
  • 4 cloves x garlic – crush, peel & chop finely
  • 5g x fresh rosemary – chop finely
  • 4 x chorizo sausages – slice finely
  • 2 tins x chopped tomato
  • 200ml x cream
  • 10g x fresh parsley – chop
  • 40g x parmesan cheese – grate finely
  • . x olive oil, salt & pepper (from your pantry)

Method

Step 1

Prepare all ingredients as indicated above.

Step 2

Bring a large saucepan of lightly salted water to the boil. Add a few drops of olive oil and the penne and cook for 8 to 9 minutes until al dente. Drain and keep warm in a colander.

Step 3

Place a few glugs of olive oil in a large frying pan over medium heat. Add garlic, rosemary and chorizo. Cook for 5 minutes until chorizo is slightly browned, stirring occasionally. Add chopped tomato, cream, salt and pepper. Let it bubble gently for another 5 minutes, then add the pasta, parsley and parmesan. Stir though for a minute.

Step 4

To serve, divide the pasta between the bowls.
