Cheesy Taco Skillet

One pot, delicious taco flavoured steak mince with green pepper and sharp cheddar.




Ingredients to serve 2

  • 250g x steak mince
  • ½ x onion – peel & chop finely
  • 1 x green peppers – dice finely
  • ½ tin x chopped tomatoes
  • ¼ cup x tap water
  • ½ x fresh chilli – de-seed & chop finely
  • 2 tsp x taco seasoning
  • 50g x baby spinach
  • 50g x mature cheddar – grate coarsely
  • 1 stalk x spring onions – slice finely
  • . x olive oil, salt & pepper (from your pantry)

Ingredients to serve 4

  • 500g x steak mince
  • 1 x onion – peel & chop finely
  • 2 x green peppers – dice finely
  • 1 tin x chopped tomatoes
  • ½ cup x tap water
  • 1 x fresh chilli – de-seed & chop finely
  • 4 tsp x taco seasoning
  • 100g x baby spinach
  • 100g x mature cheddar – grate coarsely
  • 2 stalks x spring onions – slice finely
  • . x olive oil, salt & pepper (from your pantry)

Method

Step 1

Prepare all ingredients as indicated above.

Step 2

Place a large pan onto medium heat with a few glugs of olive oil. Add the steak mince and crumble well. Cook for about 3 or 4 minutes until browned. Add the onions, chillies and green peppers and cook for about 5 minutes until the onions are translucent. Stir in the taco seasoning and then the chopped tomatoes and tap water (see quantities above). Taste to check seasoning and add a little salt and pepper if necessary. Allow to simmer for a minute or two to heat through. Add the baby spinach, let it wilt for about a minute. Mix it through. Scatter with cheddar cheese and allow to melt.

Step 3

To serve, divide the mixture between the bowls. Top with sliced spring onions.
