Ingredients to serve 4

  • 4 x sirloin steaks
  • 8 x bamboo skewers
  • 2 x bell peppers
  • 2 x red onions
  • 2 tsp x ground coriander
  • 120ml x yoghurt
  • 1 x lemon
  • 4 x naan breads
  • 5g x fresh mint
  • olive oil (from your pantry)
  • salt and black pepper (from your pantry)

Step 1

Preheat the oven to 180◦C.

Step 2

Using a fine box grater, grate the skin of the lemon to create lemon zest. Chop the mint leaves.

Step 3

Cut the steak into cubes: 2-3cm. Cut the bell peppers into squares – about 2-3cm. Peel the onion and cut into quarters and then cut each piece in half crossways. Break apart the layers of the onion. Toss the steak, bell peppers, and onion with a little olive oil, salt, pepper and ground coriander. Thread onto bamboo skewers alternating between bell pepper, onion and steak.

Step 4

Put the naan breads on a baking tray and place in the pre-heated oven for 8 minutes.

Step 5

Place a griddle or frying pan on medium to high heat. Add a little splash of olive oil to the pan. When hot, add the kebabs and pan fry for about 8 minutes, turning occasionally.

Step 6

In a small bowl, mix together the yogurt, lemon zest and chopped mint.

Step 7

Serve the kebabs on the naan bread with the yogurt sauce on the side.
