Cajun Beans & Bangers

Spiced bangers served with soft Cajun potatoes, sweetcorn, red pepper & kidney beans.




Ingredients to serve 2

  • 300g x Potatoes – cut into chunks, skin on
  • 4 x beef bangers
  • 3 tsp x Cajun Spice
  • 1 x sweetcorn cobs – cut off kernels
  • 1 clove x garlic – peel, grate finely & chop
  • ½ x bell pepper – deseed & dice (½ cm)
  • ½ tin x kidney beans – drain & rinse
  • 4 x spring onions – slice thinly at an angle
  • 3g x fresh mint – pick off leaves
  • 3g x fresh coriander – chop leaves finely
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)

  • 600g x Potatoes – cut into chunks, skin on
  • 8 x beef bangers
  • 6 tsp x Cajun Spice
  • 2 x sweetcorn cobs – cut off kernels
  • 2 cloves x garlic – peel, grate finely & chop
  • 1 x bell pepper – deseed & dice (½ cm)
  • 1 tin x kidney beans – drain & rinse
  • 8 x spring onions – slice thinly at an angle
  • 5g x fresh mint – pick off leaves
  • 5g x fresh coriander – chop leaves finely
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)

Method

Before You Begin

Prepare your ingredients & cooking utensils: Use a chopping board and lay all the ingredients out. Take out any “Pantry Items”. Boil the kettle.

Washing Instruction

Wash your hands, potatoes, spring onion, bell pepper and sweet corn cobs well. Rinse your mint and coriander thoroughly and drain on paper towel.

Gino's Tip

You want to regulate the temperature while cooking your sausages, getting colour on the outside the lowering the temperature to medium for the stipulated cooking time.

Step 1 - Potatoes

Place a large saucepan on high heat and add boiling water with a pinch of salt. Add the chunked potatoes and boil for 12-15 minutes until tender but not falling apart. If you can easily push a fork into the potatoes, they’re done. Drain.

Step 2 - Cajun Bangers

Place a pan on medium-high heat with a drizzle of olive oil. When hot, add the bangers and cook for 10-12 minutes until golden and cooked through. In the last 5 minutes of cooking, add half the Cajun Spice and toss.

Step 3 - Cajun Bean Mix

Place a pan on high heat with a drizzle of olive oil and add the potatoes with a pinch of salt. Sauté for 4-5 minutes before adding the corn and cooking for another 30 seconds. Add the garlic, bell pepper, kidney beans, spring onions and the rest of the Cajun Spice and sauté for 5 minutes until the corn is cooked.

To Serve

Serve the Cajun bean mix with the bangers. Chop the mint leaves roughly and sprinkle over with the coriander.
