Ingredients to serve 4

  • 600g x baby potatoes – cut into cubes, skin on (1cm)
  • 8 x beef bangers
  • 6 tsp x Cajun Spice
  • 2 x sweetcorn cobs – cut off kernels
  • 2 cloves x garlic – peel, grate finely & chop
  • 1 x bell pepper – deseed & dice (½ cm)
  • 1 tin x kidney beans – drain & rinse
  • 8 x spring onions – slice thinly at an angle
  • 5g x fresh mint – pick off leaves
  • 5g x fresh coriander – chop leaves finely
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)

Method

Step 1

Preparation: Boil the kettle. Prepare all ingredients as indicated above.

Step 2

Baby potatoes: Place a large saucepan on high heat and add boiling water with a pinch of salt. Add the baby potatoes and boil for 12-15 minutes until tender but not falling apart. If you can easily push a fork into the potatoes, they’re done. Drain.

Step 3

Cajun bangers: Place a pan on medium-high heat with a drizzle of olive oil. When hot, add the bangers and cook for 10-12 minutes until golden and cooked through. In the last 5 minutes of cooking, add HALF the Cajun Spice and toss.

Step 4

Cajun bean mix: Place a pan on high heat with a drizzle of olive oil and add the potatoes with a pinch of salt. Sauté for 4-5 minutes before adding the corn and cooking for another 30 seconds. Add the garlic, bellpepper, kidney beans, spring onions and the REST of the Cajun Spice and sauté for 5 minutes until the corn is cooked.

Step 5

Serve the Cajun bean mix with the bangers. Chop the mint leaves roughly and sprinkle over with the coriander.
