Herby Skewers & Mash

Beef skewers served with creamy mustard mash, roast tomato & cauliflower & a herby mustard salsa.




Ingredients to serve 2

  • 5g x fresh coriander – chop leaves roughly
  • 5g x fresh parsley – chop leaves roughly
  • 1 tsp x Dijon mustard
  • ¼ x red onion – peel & chop finely
  • ½ tsp x red wine vinegar
  • 1 x tomatoes – cut in half
  • ½ head x cauliflower – cut into florets
  • 2 x potatoes – peel & cut into cubes (1½ cm)
  • 250g x beef cubes – season with salt & pepper
  • 4 x skewers
  • ½ clove x garlic – peel, grate finely & chop
  • milk (from your pantry)
  • butter (from your pantry
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)
  • tin foil (from your pantry)

  • 10g x fresh coriander – chop leaves roughly
  • 10g x fresh parsley – chop leaves roughly
  • 2 tsp x Dijon mustard
  • ½ x red onion – peel & chop finely
  • 1 tsp x red wine vinegar
  • 2 x tomatoes – cut in half
  • 1 head x cauliflower – cut into florets
  • 4 x potatoes – peel & cut into cubes (1½ cm)
  • 500g x beef cubes – season with salt & pepper
  • 8 x skewers
  • 1 clove x garlic – peel, grate finely & chop
  • milk (from your pantry)
  • butter (from your pantry
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)
  • tin foil (from your pantry)

Method

Step 1

Preparation: Preheat the oven to 200°C. Boil the kettle. Prepare all ingredients as indicated above.

Step 2

Herby salsa: Mix together the coriander, parsley, garlic, red onion, garlic, red wine vinegar and HALF the Dijon mustard. Season with salt and pepper and stir in the olive oil (2 tbsp for 4; 1 tbsp for 2).

Step 3

Tomato & cauliflower: Place a pan on high heat with a drizzle of olive oil. Brown the tomatoes, skin side down for 1-2 minutes until slightly charred. Remove and place on a tin foil lined baking tray with the cauliflower florets. Drizzle with olive oil, season with salt and pepper and roast for 12-15 minutes until golden and cooked.

Step 4

Mustard mash: Place a pot on high heat and add boiling water with a pinch of salt. Add the potato cubes and boil for 15 minutes until soft. Drain, add a few splashes of milk, a knob of butter, the REST of the Dijon mustard and salt and pepper to taste and mash with a potato masher.

Step 5

Beef skewers: Place a pan on medium-high heat. Toss the beef cubes in a little olive oil and thread them onto the skewers. When the pan is hot, add the skewers and fry for 8-10 minutes, turning occasionally until brown all over, but still slightly pink inside.

Step 6

Serve the skewers with the mustard mash and roast veg on the side, and top with the herby salsa.
