Shredded Chicken Buns

Warm Portuguese rolls topped with chicken, creamy mayo, carrots & shredded lettuce.




Ingredients to serve 2

  • 2 x carrots
  • ½ x cucumber – matchsticks
  • 2 x chicken breasts – slice into strips(2cm)
  • ½ tbsp x Chicken Spice
  • ½ x bell pepper – deseed & dice (½ cm)
  • 2 x celery
  • 2 x Portuguese rolls
  • 2 tbsp x mayonnaise
  • 1 tbsp x yoghurt
  • ½ x lettuce – separate leaves
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)

  • 4 x carrots
  • 1 x cucumber – matchsticks
  • 4 x chicken breasts – slice into strips(2cm)
  • 1 tbsp x Chicken Spice
  • 1 x bell pepper – deseed & dice (½ cm)
  • 4 x celery
  • 4 x Portuguese rolls
  • 4 tbsp x mayonnaise
  • 2 tbsp x yoghurt
  • 1 x lettuce – separate leaves
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)

Method

Step 1

Preparation: Preheat the oven to 180°C. Prepare all ingredients as indicated above.

Step 2

Veggie sticks: Cut the cucumber and HALF the carrots in half crossways. Then cut each half lengthways into slices (½ cm thick) and cut each slice into matchsticks (½ cm). Grate the REST of the carrots coarsely. Dice HALF the celery sticks (½ cm) and cut the rest in half crossways for celery sticks.

Step 3

Chicken breasts: Coat the chicken breasts in the Chicken Spice, salt and pepper an olive oil. Place a pan on medium-high heat with a drizzle of olive oil. When the pan is hot, add the chicken and sauté for 3-4 minutes until golden. Add the bell pepper and DICED celery and mix through.

Step 4

Portuguese rolls: Place in the oven and bake for 10 minutes until golden and crusty. Remove and set aside to cool down, then cut in half. Mix together the mayonnaise and yoghurt and spread it over one half of the roll.

Step 5

Serve the Portuguese roll topped with the chicken, grated carrot, lettuce and the other half of the bun. Serve the celery sticks and carrot and cucumber matchsticks on the side.
