Soba Stir-Fry

Soba Stir-Fry

Stir-fried cabbage & carrots in a sesame soy sauce, served on soba noodles with sesame seeds.




Ingredients to serve 2

  • 2 tbsp x soy sauce
  • ½ tbsp x sesame oil
  • 15g x ginger – peel & chop finely
  • 2 cloves x garlic – peel, grate finely & chop
  • 2 x spring onions – slice at an angle
  • 2 tbsp x sesame seeds
  • ⅛ x cabbage – slice very thinly
  • 1 x carrots – trim ends, peel & grate coarsely
  • ½ pack x soba noodles
  • ½ x fresh chili (optional) – deseed & chop
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)

  • 4 tbsp x soy sauce
  • 1 tbsp x sesame oil
  • 30g x ginger – peel & chop finely
  • 4 cloves x garlic – peel, grate finely & chop
  • 4 x spring onions – slice at an angle
  • 4 tbsp x sesame seeds
  • ¼ x cabbage – slice very thinly
  • 2 x carrots – trim ends, peel & grate coarsely
  • 1 pack x soba noodles
  • 1 x fresh chili (optional) – deseed & chop
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)

Method

Step 1

Preparation: Prepare all ingredients as indicated above.

Step 2

Sesame soy sauce: Mix together the soy sauce, sesame oil, ginger, garlic and spring onions.

Step 3

Sesame seeds: Place a pan on high heat and dry toast for 2-3 minutes until lightly browned. Toss often to make sure they don’t burn. Set aside.

Step 4

Stir-fried veggies: Place a pan on high heat with a drizzle of olive oil. Add the cabbage with some sauce (1 tbsp for 4; ½ tbsp for 2) and stir-fry for 1-2 minutes. Add the carrots and cook for 2-3 minutes until softened and cooked. Season with salt and pepper, add HALF the sesame seeds and mix through.

Step 5

Soba noodles: Boil the kettle. Place the noodles in a bowl, cover with the boiling water and soak for 2-3 minutes until cooked, but with a slight bite. Drain and set aside.

Step 6

Serve the stir-fried veggies on top of the soba noodles, drizzled with the REST of the sauce and sprinkled with the REST of the sesame seeds. Sprinkle over as much or as little of the chilli as you like.
