Warm Chorizo Salad

Chorizo pan-fried with chickpeas and roasted peppers. Served with fresh coriander and a dollop of yoghurt.




Ingredients to serve 2

  • 2 x chorizo sausages – slice (3 to 5mm)
  • 1 tin x chickpeas – drain and rinse
  • 125g x roasted peppers – drain and chop
  • 5g x fresh coriander – chop coarsely
  • 60ml x yoghurt
  • olive, oil, salt & pepper (from your pantry)

  • 4 x chorizo sausages – slice (3 to 5mm)
  • 2 tins x chickpeas – drain and rinse
  • 250g x roasted peppers – drain and chop
  • 10g x fresh coriander – chop coarsely
  • 125ml x yoghurt
  • olive, oil, salt & pepper (from your pantry)

Method

Step 1

Place a large frying pan with a few glugs of olive oil over high heat. Add the chorizo slices and cook for 4 minutes, stirring occasionally until lightly browned. Then add the chickpeas and roasted peppers and cook until warmed – about 2 minutes. Season to taste. Remove from the heat.

Step 2

To serve, stir in the fresh coriander. Divide the mixture between the bowls. Add a dollop of yoghurt on top and a twist of freshly ground pepper.
