Sausages with Onion Marmalade

Pure beef sausages with artisanal onion marmalade. Served with sweet potato wedges.

Ingredients to serve 2

  • 2 x sweet potatoes
  • 4 x beef sausages
  • 125ml x onion marmalade
  • 2 tbsp x tap water
  • 3g x fresh parsley – chop finely
  • olive oil, salt and pepper (from your pantry)

  • 4 x sweet potatoes
  • 8 x beef sausages
  • 250ml x onion marmalade
  • 4 tbsp x tap water
  • 5g x fresh parsley – chop finely
  • olive oil, salt and pepper (from your pantry)


Step 1

Preheat oven to 200◦C.

Step 2

Cut the sweet potatoes into wedges lengthwise. You should get about 8 wedges (measuring around 20mm across the skin). If you don’t have average/medium size potatoes, please adjust accordingly. Place the wedges on a large roasting pan (no overlapping). Drizzle with olive oil and salt and pepper (on both sides). Place in the oven and roast for 25 minutes, turning the wedges over half way through.

Step 3

Heat a few glugs of olive oil in a large frying pan on medium heat. Add the sausages and cook for 20 minutes, turning regularly until nice and brown and cooked through. Remove and set aside.

Step 4

Drain the fat from the pan and add the onion marmalade and a little tap water (see quantity above). Stir well. Heat through for about 2 minutes on medium heat.

Step 5

To serve, divide the sausages and potato wedges between the plates. Top with onion marmalade gravy. Scatter a little coarsely ground salt and chopped parsley over the wedges.
