Pork & Apple Burger

Pork & Apple Burger

A toasted burger topped with creamy mayo, apple cabbage slaw & potato chips on the side.




Ingredients to serve 2

  • ½ x lemon – zest & juice
  • 2 x potatoes – cut into chips, skin on
  • 300g x pork mince
  • 2 x spring onions – chop roughly (including green part)
  • 2 x burger buns
  • 1 x apples
  • ⅛ x red cabbage – slice very thinly
  • 2 tbsp x mayonnaise
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)
  • tin foil (from your pantry)

  • 1 x lemon – zest & juice
  • 4 x potatoes – cut into chips, skin on
  • 600g x pork mince
  • 4 x spring onions – chop roughly (including green part)
  • 4 x burger buns
  • 2 x apples
  • ¼ x red cabbage – slice very thinly
  • 4 tbsp x mayonnaise
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)
  • tin foil (from your pantry)

Method

Step 1

Preparation: Preheat the oven to 200°C. Prepare all ingredients as indicated above.

Step 2

Lemon: Using the fine side of a box grater, grate the peel to create zest, then cut in half and juice.

Step 3

Potato chips: Cut off the ends, then cut them into 1cm slices lengthways and cut those slices into 1cm chips. Place the chips on a tin foil lined baking tray. Drizzle with olive oil, season with salt and pepper, mix and then spread in a single layer. Roast for 25 minutes, until golden and cooked.

Step 4

Patties: Mix together the pork mince, lemon zest and HALF the spring onions and season generously with salt and pepper. Shape into patties (1 per person). Add a drizzle of olive oil to a pan on medium-high heat. When hot, add the patties (they should sizzle when they hit the pan) and cook for 5-7 minutes each side until cooked.

Step 5

Burger buns: Bake for 5-10 minutes in the oven until golden and crusty. Remove and slice in half. Place in the same pan you used for the patties and toast for 2 minutes.

Step 6

Apple cabbage slaw: Grate the apple coarsely and drizzle over the lemon juice. Massage the cabbage with a little salt for 30 seconds then mix with the grated apple and the REST of the spring onions. Season with salt and pepper and more lemon juice to taste.

Step 7

Serve by spreading the bottom half of the burger bun with mayonnaise and top with the patty, apple cabbage slaw and the top half of the bun. Serve with the chips on the side.
