Cheesy Fish Pockets

Fillets of deboned fish in tin foil pockets with mushrooms, tomatoes, garlic, lemon and fresh basil, topped with parmesan cheese and baked in the oven. So yum! 21 carbs and 679 calories per plate.




Ingredients to serve 2

  • 2 x 250g x angelfish fillets
  • 1/2 punnet x mushrooms - slice
  • 1 x tomatoes - slice
  • 1 tbsp x basil - tear into pieces
  • 1/2 tbsp x oregano
  • 1 clove x garlic - crush, peel and chop finely
  • 1/2 x lemon - halve and juice
  • 1/2 tbsp x sesame seeds
  • 25g x parmesan cheese - grate finely
  • tin foil (from your pantry)
  • butter, olive oil, salt & pepper (from your pantry)

  • 4 x 250g x angelfish fillets
  • 1 punnet x mushrooms - slice
  • 2 x tomatoes - slice
  • 2 tbsp x basil - tear into pieces
  • 1 tbsp x oregano
  • 2 cloves x garlic - crush, peel and chop finely
  • 1 x lemon - halve and juice
  • 1 tbsp x sesame seeds
  • 50g x parmesan cheese - grate finely
  • tin foil (from your pantry)
  • butter, olive oil, salt & pepper (from your pantry)

Method

Step 1

Preheat oven to 200⁰C.

Step 2

Put a pan on medium heat. Add the sesame seeds to the dry pan and toast for a minute or two until lightly browned. Shake the pan often so that they don’t burn.

Step 3

Cut fish into fillets for each serving and season with a little salt.

Step 4

Create a foil parcel for each fish fillet by folding a piece of foil in half - large enough to fold over the fish and seal. Oil each sheet.

Step 5

Place a fish fillet in the centre of each piece of foil and curl up the edges around the fish so that nothing spills out. Now add equal portions of tomatoes, mushrooms, basil, garlic, sesame seeds, oregano and lemon juice to each one. Place a few pats of butter on top and sprinkle with parmesan cheese. Wrap the foil over the fish and seal all round. Put the fish parcels on a baking tray in the oven and bake for 20 minutes until the fish is done: this is when the fish flakes and the vegetables are cooked but still firm.

Step 6

To serve, either remove the contents of each parcel and plate. Or place the pockets on the plate with the foil open.
