Solo: Quick Roast

An easy one tray supper. With roast aubergine, cherry tomatoes, beef bangers and olives.




Ingredients to serve 1

  • 2 x beef bangers
  • 1 x aubergines – cut into cubes (1½ cm)
  • 75g x cherry tomatoes – cut in half
  • ¼ x red onion – slice (1½ cm)
  • 30g x green olives
  • 1 tbsp x basil pesto
  • olive oil (from your pantry)
  • salt & pepper (from your pantry)
  • tin foil (from your pantry)

Method

Step 1

Preparation: Preheat the oven to 200°C. Prepare all ingredients as indicated above.

Step 2

Roast Vegetables & bangers: Place the aubergines, cherry tomatoes and red onion on a tin foil lined tray. Drizzle with olive oil and season with salt and pepper. Mix and arrange in a single layer, roast for 10-15 minutes. Add the beef bangers roast for 15-20 minutes until golden brown and cooked. In the last 5 minutes add the olives to the tray to roast.

Step 3

Serve topped with basil pesto.
