Middle Eastern Stew

Spicy Middle Eastern chickpea stew, topped with sour cream and chermoula. Warm, garlic naan bread on the side.




Ingredients to serve 2

  • 1 tin x chickpeas – drain and rinse
  • 2 cloves x garlic – crush, peel and chop finely
  • ½ x lemon - juice
  • 2 x courgettes – cut off ends, dice (5mm)
  • 10g x fresh coriander – chop finely
  • 1 tbsp x tomato paste
  • 1 cup x tap water
  • 60ml x Middle Eastern Spice
  • 2 tbsp x garlic naan breads
  • 2 x olive, oil, salt & pepper (from your pantry)

Ingredients to serve 4

  • 2 tins x chickpeas – drain and rinse
  • 4 cloves x garlic – crush, peel and chop finely
  • 1 x lemon - juice
  • 4 x courgettes – cut off ends, dice (5mm)
  • 20g x fresh coriander – chop finely
  • 2 tbsp x tomato paste
  • 2 cups x tap water
  • 120ml x Middle Eastern Spice
  • 4 tbsp x garlic naan breads
  • 4 x olive, oil, salt & pepper (from your pantry)

Method

Step 1

Preheat the oven to 180◦C. Prepare the ingredients as indicated above.

Step 2

Heat a few glugs of olive oil in a large frying pan over medium to high heat. Add the courgettes and stir fry for about 3 minutes until browned. Turn the heat down to medium and add HALF the garlic to the pan and cook for a minute. Now add the Middle Eastern spice and cook for about a minute, stirring all the time. (The pan will seem very dry – that’s okay). Then add the tomato paste and continue to stir all the time for another 2 minutes, until sauce turns dark red.

Step 3

Now add the chickpeas and water (see quantity above) to the pot. Season well with salt and pepper and leave to simmer (bubble gently on medium to low heat) for about 10 minutes.

Step 4

Place the naan breads in the pre-heated oven for 10 minutes.

Step 5

In a small bowl, mix HALF the lemon juice with the sour cream and season with salt and pepper. Set aside.

Step 6

In another bowl, combine the coriander, the other HALF of the garlic and the remaining lemon juice to make the chermoula. Season with salt and pepper to taste.

Step 7

To serve, divide the chickpea mixture between the bowls. Top with sour cream and chermoula. Add the naan bread on the side.
