Solo: Warm Tomato & Onion Salad with Beef Sausages

Pan fried pure beef sausages with a side salad of spinach, roasted red onion and tomato with a balsamic and wholegrain mustard vinaigrette.

Ingredients to serve 1

  • 2 x beef sausages
  • 1 x tomato – cut into quarters
  • 1 x red onion – cut into quarters
  • 50g x swiss chard – cut off ends and slice into ribbons
  • 1½ tbsp x olive oil (for salad dressing)
  • ½ tbsp x balsamic vinegar
  • ½ tsp x wholegrain mustard
  • . x olive oil, salt and pepper (from your pantry)


Step 1

Preheat oven to 200⁰C. Prepare all ingredients as indicated above.

Step 2

Heat a little olive oil in a frying pan over medium heat. Add the sausages and cook for 12 to 15 minutes, turning occasionally, until cooked through. Remove and keep warm.

Step 3

Place the red onion and tomato on a baking tray. Drizzle with a little olive oil, salt and pepper. Put the tray in the pre-heated oven for 15 minutes. Remove and set aside.

Step 4

To make the salad dressing, mix the whole grain mustard, balsamic vinegar, salt, pepper and olive oil (see quantity above for salad dressing) in a small bowl/mug.

Step 5

Once the onion and tomato is cooked and slightly cooled, place the swiss chard in a large salad bowl. Add the onion and tomato and drizzle the dressing over the top. Toss to combine.

Step 6

To serve, place the sausages on the plate. Add a serving of salad on the side.
