Tagliolini with Fresh Tomatoes & Toasted Pine Nuts

Fresh tomatoes and garlic tossed with tagliolini pasta and topped with toasted pine nuts.




Ingredients to serve 2

  • 1 x tomatoes – cut into cubes (5mm)
  • 1 clove x garlic – crush, peel and chop finely
  • 250g x tagliolini pasta
  • 1 tbsp x pine nuts
  • 1 tbsp x olive oil (from your pantry)
  • salt & pepper (from your pantry)

Ingredients to serve 4

  • 2 x tomatoes – cut into cubes (5mm)
  • 2 cloves x garlic – crush, peel and chop finely
  • 500g x tagliolini pasta
  • 2 tbsp x pine nuts
  • 2 tbsp x olive oil (from your pantry)
  • salt & pepper (from your pantry)

Method

Step 1

Prepare all ingredients as indicated above.

Step 2

Mix the following ingredients together in a bowl: tomatoes, garlic, olive oil, freshly ground salt and pepper. Set aside.

Step 3

Place a small, dry frying pan on medium to high heat. Add the pine nuts and toast for about a minute or until lightly browned. Stir constantly to prevent them from burning.

Step 4

Bring a large saucepan of lightly salted water to boil. Add the tagliolini pasta and cook for 3 minutes. Drain and return to the pot. Add the tomato mixture and toss to combine.

Step 5

To serve, divide the pasta between the bowls and scatter with toasted pine nuts.
