Solo: Steak Fajitas

Juicy sirloin steak strips, onions and bell peppers served on a tortilla with salsa and sour cream on the side.

Ingredients to serve 1

  • 200g x sirloin steak
  • ½ x onion – peel and slice finely
  • ½ x bell pepper - slice finely
  • 1 x tortilla
  • ½ x tomato – dice finely
  • ¼ x red onion – peel & chop finely
  • ¼ x lemon – halve and juice
  • ½ tbsp x olive oil – for the salsa (from your pantry)
  • 3g x fresh coriander – chop finely
  • 30ml x sour cream
  • . x olive oil, salt & pepper (from your pantry)


Step 1

Prepare all ingredients as indicated above.

Step 2

Place a frying pan on the stove on high heat. Rub the steak all over with olive oil and season well with salt and pepper. When the pan is hot, place the steak in the pan and fry for 3 minutes each side (medium to rare), turning only once with tongs (or spoons). Cook for longer on each side if you prefer your steak medium or well done. When done, remove from pan and aside to rest.

Step 3

Add the onion to the same pan and cook, stirring occasionally, for 2 minutes. Now add the bell pepper, season with salt and pepper and cook for about 3 to 4 minutes until the onions are translucent and slightly brown. Remove and set aside.

Step 4

Mix the tomato, red onion, olive oil, coriander, lemon juice and a little salt in a bowl to make up the salsa.

Step 5

Place the steak on a cutting board. Using a very sharp knife, slice the steak against the grain: this means cutting across (and not parallel to) the long parallel muscle fibres (or grain) in the meat creating short fibres in each piece and delivering tender slices of meat.

Step 6

Just before serving, heat the tortilla for about 20 seconds on each side in a dry frying pan on medium to high heat.

Step 7

To serve, place the tortilla on the plate. Top with bell peppers, onions and steak strips. Add a dollop of sour cream and a serving of salsa on the side.
