Corn Fritters &  Bocconcini Salsa

The yummiest pan-fried corn, carrot and coriander fritters accompanied by bocconcini, tomato, onion and chilli salsa and a little sweet chilli sauce on the side. Tasty, tasty, tasty!




Ingredients to serve 2

  • 1/2 can x corn kernels - drain
  • 1/4 cup x milk (from your fridge)
  • 1 x eggs (from your pantry)
  • 50g x self-raising flour
  • 1/2 tsp x cumin
  • 75g x bocconcini - dice into small pieces (4mm)
  • 2 x spring onions - cut end off and slice finely
  • 1/2 x carrot - peel and grate coarsely
  • 1 x red onions - peel and chop finely
  • 1/2 x fresh chillies - de-seed and chop finely
  • 1/2 x fresh tomato - chop finely
  • 1/2 x lime - halve and juice
  • 1 tbsp x fresh coriander - chop finely
  • 1/2 tbsp x olive oil (for the salsa - from your pantry)
  • 2 tbsp x sweet chilli sauce

  • 100g x self-raising flour
  • 1 tsp x cumin
  • 150g x bocconcini - dice into small pieces (4mm)
  • 4 x spring onions - cut end off and slice finely
  • 1 x carrot - peel and grate coarsely
  • 2 x red onions - peel and chop finely
  • 1 x fresh chillies - de-seed and chop finely
  • 1 x fresh tomato - chop finely
  • 1 x lime - halve and juice
  • 2 tbsp x fresh coriander - chop finely
  • 1 tbsp x olive oil (for the salsa - from your pantry)
  • 4 tbsp x sweet chilli sauce

Method

Step 1

Whisk the milk and eggs in a jug. Place flour in a bowl and gradually add the milk mixture, whisking until smooth. Stir in carrot, corn, cumin, spring onions and half the coriander.

Step 2

Heat a few glugs of olive oil in a large non-stick frying pan on medium heat. When the oil is hot, gently spoon in ΒΌ cup portions of fritter mixture into the pan. Cook for 2 to 3 minutes each side until golden and cooked through - turning only once. Remove, drain on paper towels and keep warm

Step 3

Mix the tomato, red onion, olive oil, the other half of the coriander, chilli, lime juice, bocconcini and a little salt and pepper in a bowl to make up the salsa.

Step 4

To serve, divide the corn fritters between the plates and spoon a portion of both salsa and sweet chilli sauce on the side.
