Tahini Potatoes

Tahini Potatoes

Baked sweet potatoes topped with chickpeas roasted in an exotic middle eastern spice mix and topped with garlic, lemon and dill infused tahini sauce.




Ingredients to serve 2

  • 2 x sweet potatoes – rinse & cut into quarters
  • ½ tin x chickpeas – rinse and drain
  • 1 tsp x Exotic Spice Mix
  • 1 x tomatoes – dice (5mm)
  • 5g x fresh coriander – chop finely
  • 2 tbsp x tahini
  • ½ x lemon – halve and juice
  • 3g x fresh dill – chop
  • 1 clove x garlic – peel and grate finely
  • olive oil (from your pantry)
  • salt and black pepper (from your pantry)
  • salt and black pepper (from your pantry)tin foil (from your pantry)

  • 4 x sweet potatoes – rinse & cut into quarters
  • 1 tin x chickpeas – rinse and drain
  • 2 tsp x Exotic Spice Mix
  • 10g x tomatoes – dice (5mm)
  • 4 tbsp x fresh coriander – chop finely
  • 1 x tahini
  • 5g x lemon – halve and juice
  • 2 cloves x fresh dill – chop
  • garlic – peel and grate finely
  • olive oil (from your pantry)
  • salt and black pepper (from your pantry)
  • salt and black pepper (from your pantry)tin foil (from your pantry)

Method

Step 01

Preparation: Prepare all ingredients as indicated above. Preheat oven to 200°C. Line two baking trays with tin foil.

Step 02

Sweet potatoes and chickpeas: Place the sweet potatoes and chickpeas on the baking trays. Drizzle with olive oil and sprinkle with the spices (cumin, ground coriander, cinnamon and smoked paprika). Bake in the oven for 25 minutes.

Step 03

Tomato topping: Mix the tomatoes, fresh coriander and a splash of lemon juice in a bowl. Set aside. Season to taste.

Step 04

Tahini sauce: Mix these ingredients in a bowl – tahini, a squeeze of lemon juice, garlic, fresh dill, splash of water. Taste and add salt if needed.

Step 05

To serve: Divide the potato wedges between the plates. Top with roasted chickpeas and drizzle with tahini sauce and tomato topping.
