Shiitake Ramen

Shiitake Ramen

Sesame, ginger and garlic infused ramen broth with shiitake mushrooms, kale and carrots, topped with sriracha and crunchy golden panko crumbs.




Ingredients to serve 2

  • 2 tbsp x vegetable fonds
  • 4 cups x boiling water
  • 100g x shiitake mushrooms – slice
  • ½ tbsp x sesame oil
  • 20g x fresh ginger – peel and grate finely
  • 1 clove x garlic – peel and grate finely
  • ½ tsp x chilli powder
  • 80g x ramen noodles
  • 2 x spring onions – cut off ends, slice
  • 50g x kale – rinse well and slice
  • 1 x carrots – peel and grate coarsely
  • 1 tbsp x Sriracha sauce (optional)
  • 25g x Panko crumbs
  • olive oil (from your pantry)
  • salt (from your pantry)

Ingredients to serve 4

  • 4 tbsp x vegetable fonds
  • 8 cups x boiling water
  • 200g x shiitake mushrooms – slice
  • 1 tbsp x sesame oil
  • 40g x fresh ginger – peel and grate finely
  • 2 cloves x garlic – peel and grate finely
  • 1 tsp x chilli powder
  • 160g x ramen noodles
  • 4 x spring onions – cut off ends, slice
  • 100g x kale – rinse well and slice
  • 2 x carrots – peel and grate coarsely
  • 2 tbsp x Sriracha sauce (optional)
  • 50g x Panko crumbs
  • olive oil (from your pantry)
  • salt (from your pantry)

Method

Step 01

Preparation: Prepare all ingredients as indicated above. Put the kettle on to boil.

Step 02

Vegetable stock: Mix the vegetable fonds with the boiling water and set aside.

Step 03

Shiitake broth: Place a few glugs of olive oil in a large saucepan on high heat. Add the mushrooms and sauté for 5 minutes until lightly browned, stirring often. Turn the heat to low and cook for another minute. Add the sesame oil, garlic, ginger and chilli powder and stir fry for another minute. Turn the heat to high and add the vegetable stock. Once it starts to boil turn the heat to medium and allow to simmer for 5 minutes. Add the ramen noodles and cook for another 5 minutes. Remove from the stove and add the spring onions, kale, carrots and Sriracha sauce (optional). Check seasoning and add a little salt if needed. Serve immediately.

Step 04

To serve: Divide the broth between the bowls and top with panko crumbs for a little crunch.
